For  Tempering

✓ Cooking Oil - 2 tbsp

✓ Mustard Seeds - 1 tsp

✓ Fenugreek Seeds - 1/2 tsp

✓ Curry Leaves - 1 sprigs

✓ Dried Redchilli - 1 nos (slit into two)

For  making  Ingredients  are

✓ Ivy Gourd - 150 gram

✓ Green Chilli - 1 nos

✓ Big Onion - 1 nos

✓ Ginger - 1 inch

✓ Tamarind - Gooseberry size

✓ Turmeric powder - 1/2 tsp

✓ Chilli powder - 1 tsp

✓ Coriander powder - 1/2 tsp

✓ Jaggery - 1/4 tsp

✓ Salt - as per your taste

✓ Water - 1/2 cup

Recipe Description


    
         


1) First chopped the vegetables such as Ivy Gourd, Green chilli, Onion and Ginger. Chopped the vegetables into small cube shape.


2) Add some gooseberry size Tamarind with few tablespoon of hot water. Allow softening and keep aside.


3) Take a pan add two tablespoon of oil add one shallots chopped into small pieces, then add some Mustard seeds once it crackled then add some Fenugreek seeds, few Curry leaves and one Dried Redchilli slit into two piece. Let them get fry.



4) Take the chopped vegetables, transfer the vegetables into a pan add some Turmeric powder now stir and saute the vegetables.



5) Add the Tamarind paste. Allow to cook for few minutes.




6) Now add a teaspoon of Chilli powder, half teaspoon of Coriander powder and required amount of Salt as per your taste.


7) To enhance the taste add small piece of Jaggery. Then stir the vegetables again and then close the lid allow to cook for few more minutes.



8) The curry thicken upto desired consistency. Switch off the flame. Now Kovakkai Curry is ready to serve.
