KERALA STYLE AVIYAL WITHOUT CURD

Simple Kerala Style Aviyal Recipe without Curd

For  Tempering

✓ Coconut Oil - 2 tsp

✓ Mustard Seeds - 1/2 tsp

✓ Curry Leaves - 2 sprigs

✓ Shallots - 1 (chopped small piece)


For  Coconut  Masala  Paste

✓ Fresh shredded coconut - 1/3 cup

✓ Green Chillies - 2 slit

✓ Cumin Seeds - 1/2 tsp

✓ Shallots - 2 

✓ Garlic - 1 piece


For Steaming  Vegetables

(Mixed vegetables cut into 3inch long strips)

✓ Mixed vegetables - 3 cups

✓ Here I used 

  * Brinjal - 1 (Small size)

  * Drumstick - 1

  * Raw Mango - Few pieces(4-5pieces)

  * Carrot - 1

  * Snake Gourd - 1/2 (Small size)

  * Cucumber - 1/2 (Small size)

✓ Turmeric powder - 1/2 tsp

✓ Salt - 1 tsp

✓ Water - 1 cup

Recipe Description

1) For making aviyal recipe first chopped the vegetables. Here I used Brinjal, Drumstick, Raw Mango, Carrot, Snake Gourd and Cucumber. Cut all this vegetables into 3 inch long strip.



2) For making coconut masala paste add some freshly shredded coconut, green chilli, cumin seeds and garlic. Now grind all this ingredients in a mixcy.


3) While preparing coconut masala add some water and grind like a coarse consistency. Keep this coconut masala aside.


4) Take a kadai add few tsp oil once the oil get hot add some Mustard Seeds, Curry leaves and shallots let them splutter.




5) Put the chopped vegetables into kadai. Add some Turmeric powder required amount of Salt as per your taste. Then stir and saute the vegetables.


6) Now add the coconut masala.



7) In this stage add some water and allow vegetables for boiling.


8) To enhance the taste add two tablespoon of coconut oil finally.

 
9) Now the Aviyal recipe is ready to serve.
